Sanjay Kumar joins Abela and company, Dubai – UAE as the new Executive Chef. Prior to his new role, Sanjay was Executive Sous Chef at FASSCO International (SATS) Dubai. He has almost 21 years’ industry experience, including stints at some of the world’s best hotel groups and having held executive positions including at Taj Sats flight Kitchen in Mumbai and Pavilion Foods Dubai. Chef Sanjay is assigned to a new project which is completely automated brand new food factory with state of art machinery. The concept is called culinary solution by Abela and Company will be operational in the month of November, 2018.
Sanjay has done his Diploma in Hotel Management from NIPS school of HM, Kolkata in year 2001. He completed his basic schooling from Patna Board, higher secondary education from Tara College in Jahanabad and graduation from Magadh University, Bihar.
Beginning of culinary journey:
After completion of his catering education he joined Hotel Hindustan International in Kolkatta he began his culinary journey and never looked back. He worked for various groups and enhanced his culinary skills by working various hotels. These include The Park – Kolkata, Beverly Hotel – Chennai, The Club (Holiday inn Mumbai) under leadership of prominent chef Chef Krishna Kumar (KK), Indage Hotel – Mumbai. He felt that he needs to enhance his culinary skills further in variety of cuisines, so he joined Cruise Liners for many years. Thereafter he returned back to India and joined Kambala hospitality under able guidance of CEO and MD Deepak Bassi. Later he joined Taj Sats flight Kitchen and enhanced his culinary skill under stalwart Chef Satish Arora.
After working for almost seven year in Taj Sats, he wanted to further enhance his culinary skills and to know more about Global cuisine, he moved out of the country. He joined The Albwardy Group’s Pavilion foods Dubai as Executive Chef, Culinary Development. His experience working in Taj Sats came handy at Pavilion foods. The pavilion food is a part of Specialty Restaurants which have a track record in the food and beverage, quality dining and contemporary specialty restaurant businesses in Dubai.
Inspiration from family:
Chef Sanjay is first person in his family to join hotel industry. Prior to him none worked for the hotel industry. His elder brother who works with CESC (Calcutta electric supply company) has encouraged him to join hotel management course. One of his friend’s son was working in commanding position in Oberoi Grand Kolkatta after completion his catering diploma. This vision of his gave him a mark in his mind, so he advised him to opt for catering as his career. It’s not easy to be a successful in food production unless you learn a lot to be competitive in the trade. He blissfully accepted and not looked back thereafter. He left no stone unturned to and followed every single day to learn more and more to sharpen his skills.
Grand Master Chef Satish Arora is his role model. He is fortunate to work under his able leadership at Taj Sats. After joining hotel trade, he started reading the giant personality of the industry. After reading about chef Satish Arora, he became his diehard fan and started following him. Rajeev Bansal – Executive Chef Taj Sats Mumbai also helped him in sharpen his culinary skills which were happening globally.
