The Singing Chef – Antonello Cancedda has recently joined Prego, the fun dining Italian restaurant at The Westin Mumbai Garden City. He heads the culinary team of as Chef de Cuisine (CDC). He brings with him over two decades of experience in authentic Italian fare.
Antonello has over the years spent time heading Italian restaurants in leading hotel chains in India. A graduate of Scuola Alberghiera Restaurant and Hotel School of Genoa and an alumnus of Hotel and Restaurant school of Alassio, Italy, he has worked extensively in Europe, United States and Canada before venturing into Asia.
The beginning of Chef
Antonello drew his inspiration of becoming a chef from his father who loved exotic ingredients and flavors and introduced Antonello to the world of food at an early age. His love for food and his need to be creative led to him formalizing his profession in the culinary world.
Love for Music
A little known fact about Antonello is his passion for strumming the guitar and belting out well known bollywood songs for his diners. Again, inspired by his father who was Tenor, Antonello’s love for India has translated into the pursuit of his hobby of music with well known Bollywood songs. He is a familiar sight in his restaurant, tossing up delectable Italian cuisine and regaling guests with his singing prowess. He began singing in his culinary profession while working in a restaurant in Genoa Italy. He always gets positive feedback from his guests as they always enjoy their dining experiences when it is a combination of delicious food and good music.
Wine pairing with meal
Wine drinking is on nascent stage in India and growing steadily but slowly. Chef Antonello has noticed that Indians prefer ordering for a glass of wine instead of a bottle. A glass of Chianti Red wine is one of the most favoured wines amongst Indian guests which goes very well when it’s paired with Italian cuisine. Globe trotters’ guests are well aware of wine pairing with meal and it is increasingly trying out wines of old and new world.
Prominent vegetarian dishes
It is a known fact that chef has to create numerous vegetarian dishes keeping in mind larger number of vegetarian guests. Lasagna Portofino, Torta Pasqualina, Burrata are some of the most prominent vegetarian dishes are prepared by Chef Antonello at Prego. He always willingly customizes the dishes as per the guest preference when they request for it.
