Novotel Mumbai Airport is hosting traditional Kashmiri Pandit Cuisine with Home Chef Aparimita Sapru, in association with Chef Pin with a Kashmiri Food Festival at Food Exchange. It’s a three-day food festival from the 14th to the 16th of December 2023. This feast promises an authentic immersion into the rich culinary heritage of Kashmir. It is Novotel’s 3rd Community Kitchen Project.

The festival aims to celebrate and honour the centuries-old culinary traditions of Kashmir, presenting an array of signature dishes. Diners can indulge in culinary masterpieces such as the iconic Rogan Josh, soul-soothing Yakhni, comforting Dum Aloo, and the succulent Mutton Kebabs — a true reflection of Kashmir’s culinary artistry.

Kashmiri Pandit Cuisine is an extensive spread that introduced the use of yogurt, asafoetida, and turmeric powder to Indian cuisine. Kashmiri Pandit Cuisine was traditionally cooked on Dhaan (Chulha) in a Deigh (Clay Mud Pot) without the use of Onion and Garlic and with heavy influence of dry ginger and fennel powder. The cuisine’s foundation lies in three exquisite gravies – Kaliya (Turmeric based); Yakhni (Yogurt based) and Roganjosh(Dried Kashmiri red chilli powder based) which are used for both vegetarian and non- vegetarian dishes.

To complement these gastronomic delights, the festival offers an assortment of traditional Kashmiri beverages. Delight your palate with the fragrant Kahwa, the creamy Kashmiri Phirni, the rich Shahi Tukda, and the traditional Kashmiri Zarda, completing the immersive experience.

Food Exchange restaurant is adorned in a thematic decor, transporting guests to the heart of Kashmir, creating an atmosphere that perfectly complements the culinary journey.
