In a historic achievement for Indian gastronomy, Trèsind Studio, located in Dubai’s St. Regis Gardens at The Palm Jumeirah, has been awarded three Michelin stars in the 2025 Michelin Guide Dubai. This marks the first time an Indian restaurant globally has received this prestigious recognition, making it a defining moment for modern Indian cuisine.
Led by celebrity Chef Himanshu Saini, Trèsind Studio offers an intimate and immersive dining experience with just 20 seats, allowing for a personalised gastronomic journey. The restaurant’s meticulously curated 16-course tasting menu is a culinary exploration of India’s vast regional diversity, presenting familiar flavours through an avant-garde lens.
Remarkably, the menu avoids stereotypical luxury ingredients like caviar and foie gras, instead embracing authentic elements and nostalgic inspirations from Indian street food. Chef Saini, who grew up in Delhi’s Chandni Chowk, channels his upbringing into creative expressions such as “Sadhya,” a tribute to Kerala’s culinary traditions, and “Kebab Scarpetta,” which draws from the essence left in a pan after cooking kebabs.
The Michelin Guide commended Trèsind Studio for its “masterpiece of originality, intrigue, and precision,” lauding Saini’s ability to elevate humble Indian ingredients into refined, flavourful works of art. An 18-course experience detailed by Michelin inspectors praised the narrative flow of the menu, complemented by regional maps presented at each course transition, which added both drama and context.
This milestone not only secures Trèsind Studio’s place among the world’s top culinary destinations but also reflects the evolving global perception of Indian cuisine—from takeout stereotype to world-class fine dining.
