Indian chef Swadesh Kumar has taken Indian and global comfort food to a new audience in the United Kingdom with the growing success of Chilliflake World Cuisine, a modern casual dining brand that focuses on freshly prepared food, open kitchens and honest ingredients. The first Chilliflake outlet opened in 2014 at Leicester and has steadily built a loyal customer base for its made-to-order meals, live cooking concept and value-driven menu.
Chef Swadesh, who has worked earlier with several well-known hotels and restaurants in India and the UK, including Holiday Inn Juhu, Leela Beach Goa, Ambassador Hotel Mumbai and The Bukhara London. He brings years of hands-on kitchen experience to the brand. His concept is simple and transparent: food should be cooked fresh, in front of the customer, using natural ingredients, fresh pizza bases and real cheese, without artificial additives.

The Leicester outlet of Chilliflake World Cuisine operates with an open-plan kitchen, allowing guests to watch their meals being prepared live. The menu offers a wide spread ranging from Indian curries and Indo-Chinese dishes to pizzas, burgers, wraps, rice, noodles and fusion snack boxes, making it a popular choice among families, students and late-evening diners.
Building on the success of the Leicester restaurant, a second Chilliflake World Cuisine outlet is now set to open in Liverpool later this month. The upcoming outlet will follow the same live-kitchen format and focus on freshly cooked food, extending the brand’s presence in the UK.
Chef Swadesh Kumar, speaking about the concept, says the idea is to offer honest, affordable food without shortcuts, where customers can see what goes into their meals. With its emphasis on freshness, transparency and variety, Chilliflake World Cuisine is steadily carving a niche for itself in the UK’s competitive casual dining space, especially among those looking for flavourful food cooked right in front of them.
