Quinoa Pancakes

INGREDIENTS:

  • 1 cup Quinoa flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ cup Greek yoghurt 
  • ½ cup Almond milk
  • ½ mashed ripe banana
  • 3 tablespoons  honey
  • 1 tablespoon vanilla extract
  • 1 egg
  • Butter
  • Fruits for garnish
  • Maple syrup

METHOD

  • Take a large bowl, add the quinoa flour, baking powder and baking soda and mix well.
  • Take another large sized bowl, add Greek Yogurt, Almond Milk, Mashed Banana, Honey, Vanilla extract, Eggs and whisk all the ingredients properly.
  • Add Quinoa flour mix to the above Yogurt mix and whisk properly.
  • Take a pan, put in on medium heat and add a dollop of butter.
  • Take a spoonful of the pancake mix, pour it on the pan and spread evenly to make pancakes. 
  • Let it cook for 2mins, flip it, and cook the other side as well.
  • Make 4-5 pancakes, and layer them on top of each other.
  • Garnish with fresh fruits and a drizzle of maple syrup.

Chef Binish Baby is working as Senior Executive Chef at The Lemon Tree Premier hotel in Mumbai. He began his culinary journey with Park Hyatt Goa Resort and Spa.He possesses culinary skills with around two decades of of hands-on National and global experience specializing in European cuisine. He completed his B-Tech in Hotel Management.

Chef Binish has worked for India’s top brands like with Park Hyatt Goa (Da luigi & Market grill restaurant), The Oberoi Mumbai (Rotisserie & sea grill and Tiffin’s). He has also spent good years of experience at P&O Cruise line. 

His passion is not just cooking but to consistently provide quality food, always believe in constantly learning. During his free time, he loves to spend some quality time with his two daughters and cook something simple yet interesting for them. 

Cooking for family is a mental break or relaxation for him and just enjoys the sensory experience of his cooking.

His inspiration for cooking was his father who loves cooking and serves the dishes to family and friends. But he can’t deny the fact that mom’s food was the best.
