Ummaro, the signature Indian restaurant of Courtyard by Marriott has been a confluence of history and gastronomy, showcasing the flavours, ingredients and aromas of royalty from a bygone era of grandeur and opulence.

In keeping with this core philosophy, we are proud to present a Nizami dawat by the best of Hyderabad – Dilnaz Baig. The food connoisseur, acclaimed epicure, and custodian of the city’s culinary culture, and founder of Hyderabad city’s Shaam-E-Ghazal chapter, Baig brings with her the treasured recipes from the royal kitchens.

Relish the rich flavors, ageless recipes, and fine taste of Nizami cuisine in a 2-week culinary collaboration from 25th January until 4th February as she showcases her signature preparations to Mumbai. Savour authentic delicacies such as Shikampur (mutton patty stuffed with onion), Diwani handi (mixed vegetables), Dum ki murgh (semi-dry chicken with dry fruits and khoya), mouth-watering Hyderabadi Haleem (pounded wheat and mutton cooked overnight), and Khubuli (chana dal biryani-type rice preparation) to name a few, paired with classics from the Ummrao kitchen such as our award-winning Kache gosht ki biryani, Boti kebab or the irresistible Kofte ka Salan. Each dish tells a story, from its epic origin to its innovative reinvention and Dilnaz Baig along with our Executive Chef, Biju Philiph has woven together a menu that will linger on with you, long after you leave.

Executive Chef, Biju Philiph says “Ummrao has been an ode to timeless traditions and home to authentic Awadhi food. We thought the infusion of the cuisine from Hyderabad, the land of the Nizams would be a wonderful addition. So, staying true to our core philosophy of authenticity we are delighted to bring a home chef to Mumbai to showcase the true taste of the region. This marks yet another milestone on our journey to present our patrons with elevated epicurean experiences”.
