A Special Menu featuring the unique Georgian Flatbread

Global delicacy lovers in Mumbai have reason to cheer, high profile Chef Reuben Bhate presents to the city – The Khachapuri food festival at The St. Regis hotels restaurant, The Middle Eastern Lounge Bar & Kitchen. Khachapuri is a soft, aromatic, and fluffy Georgian boat-shaped flatbread that is served freshly baked from the ‘Tone’, a traditional stone oven, traditionally savored best when the bread crust is dipped into the melted cheese center.

It may be noted that Sette Mara is a vibrant Middle Eastern Lounge Bar & Kitchen at The St Regis Mumbai that takes inspiration from the vast coastline linking the rich cultures of Greece, Turkey, Egypt, Morocco, Lebanon, Persia and Georgia. It’s a continuation of the legacy of presenting the best of the flavours, textures, and tastes of the Levant region with its deep nuances of aromatic spices and wholesome ingredients.

The Khachapuri Festival is a limited edition menu festival that began recently. It’s featuring Megrelian Verde (Four cheese -Mozzarella, Kashkwan, Halloumi, Feta, Matbucha, Harissa Mayo, Crispy Kale, Dukkah), Shatta (Spiced Bell Pepper, Mozzarella & Kashkwan Cheese, Black Olives, Turkish Aleppo Pepper).

The non-vegetarian options include Ras El Hanout & Herbed Chicken(Spiced Chicken, Matbucha, Harissa, Cheese, Friend Onions, Cilantro), Aleppo Spiced Prawns(Spiced Prawns, Tomato, Dried Mint, Feta, Mozzarella, Kashkwan)and Braised Lamb(Pulled Lamb, Apricot, Cheese, Pomegranate Pearls, Pine Nuts, Labneh Drizzle, Parsley)

You can finish your experience with a Dessert Khachapuri for the perfect ending. The Dessert Khachapuri features Mozzarella, Banana, Nutella, Goat Cheese, Truffle Oil, Hazelnuts, and Sumac. So it’s a time to savour Khachapuris with a collection of signature Negronis and handcrafted cocktails, freshly concocted by spirited bartenders.

Chef Reuben is a global food & beverage professional with almost one and half decades of diversified experience in the hospitality industry cutting across countries and cuisines. He has vast international experience working in New York City, USA in Michelin-starred restaurants under celebrity chefs such as Daniel Boulud, Gabriel Kreuther & Floyd Cardoz. He is extensively skilled in Restaurant kitchen operations, Menu Engineering, Western & European cuisine & Food Cost Analysis. He is a strong operation professional with an Associate’s degree from the prestigious Culinary Institute of America (CIA). He strongly believes that building a strong team is imperative for the success of any world-class Hotel / Restaurant.

Chef Reuben did his culinary education from India’s prestigious Institute of Hotel Management and Catering Technology (IHM) Mumbai and world leader Culinary Institute of America (CIA). Soon after completing his hotel management, Chef Reuben began his culinary journey from Taj Group of Hotels (IHCL) and moved on to enhance culinary skills and worked with leading brands. He sharpened his skill by working with leading, top celebrity and Michelin starred chefs.
