Celebrity Chef Milind Sovani’s prominent Indian restaurant Bhoomi, located on Orchard Road, has earned a coveted spot in the Michelin Guide 2025. The recognition not only marks a milestone in Sovani’s celebrated culinary journey but also reflects the rising global esteem for Indian regional cuisine in Singapore’s fine dining scene.
Bhoomi—meaning “Earth” in Hindi—is a tribute to the vast and varied culinary heritage of India. Building on the success of his Michelin-starred restaurant The Song of India, Sovani envisioned Bhoomi as a canvas to explore India’s gastronomic diversity, with dishes ranging from the fiery coastal flavours of Konkan to the vibrant street fare of Indore.
“Bhoomi is more than a restaurant—it is my culinary ode to India’s soil, soul and stories,” said Sovani. “I wanted to create a space where every dish not only delights the palate but also tells a story of its land, people and tradition. To be recognised by Michelin for this is incredibly humbling.”
The menu is crafted with intention, featuring regional gems like Kulthache Kaln, a rustic lentil delicacy from the Konkan belt, and Awadhi Chicken Dum Biryani, cooked slowly in charcoal-fired clay pots for an earthy depth. Vegetarian favourites such as Pindi Chole te Khasta Kulcha are designed to evoke comfort and authenticity, while desserts like Gur ki Rasmalai, made with sugar-free palm jaggery, bring together tradition and wellness.
A key pillar of Bhoomi is sustainability. With organic grains, traditional pulses, and handmade Indian spices, the menu reflects Sovani’s commitment to responsible sourcing and nutritional integrity. “Authenticity must go hand in hand with responsibility,” he said.
The interiors mirror the essence of the menu—earthy, grounded and handcrafted. Warm tones, natural textures, and artisanal décor create an immersive dining experience that feels both refined and rooted.
Bhoomi’s inclusion in the Michelin Guide 2025 underscores its excellence in both cuisine and service. For Sovani, it is a deeply personal validation of his long-standing mission to elevate Indian food on the world stage.
“Indian cuisine has always embodied rich depth and profound dignity, rooted in centuries of tradition and cultural diversity. With Bhoomi, my goal was to showcase how this soulful heritage can be presented with sophistication, creativity, and respect—highlighting its versatility and timeless appeal. This recognition not only affirms my place among the global culinary elite but also reinforces Indian cuisine’s well-deserved status as a major force in the world of fine dining,” he added.
