Step into any conversation on Indian hospitality, and one name instantly commands attention: Aspi Nallaseth. For over fifty years, he has been at the forefront of the industry’s evolution, shaping luxury hotels, resorts, fine dining, and hospitality education. His journey spans India, Europe, West Africa, and the Middle East, but it’s not just the destinations that define his legacy—it’s the way he has reshaped hospitality, mentored generations and raised the bar at every turn.
Driven by a lifelong passion for people and places, Nallaseth stepped into hospitality after graduating from the Institute of Hotel Management, Chennai, in 1975. His early stint at the Taj Mahal Hotel in Bombay proved pivotal, offering him exposure to luxury hospitality and the opportunity to train in Europe. Trained under culinary legends like Paul Bocuse, he returned to India with a bold vision. In 1979, he introduced Nouvelle Cuisine to the country, a pioneering step that redefined fine dining and set new benchmarks for the industry.
Over the decades, Nallaseth has worn many hats—operator, consultant, advisor, mentor—mastering each with equal finesse. He managed hotels in Mahabaleshwar, Dubai, and West Africa, overseeing everything from industrial catering to nightclub operations. In India, he earned recognition for steering prominent brands such as Fariyas Hotels & Resorts, Royal Palms Golf & Country Club, and Shell Inn International, where he played a key role in launching the Holiday Inn Mumbai International Airport, one of the first “refreshed” Holiday Inns in the country.
Between 2016 and 2021, Nallaseth served as Secretary General of the Hotel & Restaurant Association Western India (HRAWI), representing over 1,100 hotels and restaurants, including the Taj, Oberoi, Marriott, and Hyatt. He became a prominent advocate for the sector, building bridges and shaping policies across Maharashtra, Gujarat, Goa, and Madhya Pradesh.
Even after decades in the business, Nallaseth continued to innovate. He launched Comprehensive Hospitality Solutions (CHS), a consultancy that advised resorts, clubs, restaurants, and malls while nurturing manpower and hospitality education. Today, as Advisor to the Board of Directors and Owners’ Representative at FRPL, he guides hotel operations in Mumbai and Lonavala, blending his extensive experience with a forward-looking approach.
Ask what drives him, and he speaks not of awards but of people—the teams he’s nurtured, the young professionals he’s guided, and colleagues who’ve journeyed alongside him. For Nallaseth, hospitality has never been about buildings or brands alone; it has always been about people and experiences. From introducing nouvelle cuisine to India to shaping modern hotel strategies, his story is one of vision, resilience, and enduring passion.
