Renowned Indian chef Chandrachur Chamoli has carved a remarkable career blending science, art, and passion, taking him from Indian kitchens to the global culinary stage. With a background in Chemistry and Biology, Chamoli applies scientific precision to flavors, textures, and presentations, redefining Indian cuisine through molecular gastronomy while seamlessly merging tradition with modernity.

Chamoli began his career at Best Western The Emerald Hotel in Mumbai’s Juhu, later honing his skills at prestigious properties including Ananda in the Himalayas, The Lalit Ashok Bangalore, and Hotel Hill View Faridabad. At Ananda, Asia’s leading spa resort, he specialised in wellness cuisine and was part of the team serving Prince Charles during his visit.

Padmashri Awardee Chef Sanjeev Kapoor says, “Chef Chandrachur is a highly professional Indian chef and knows the nuances of contemporary cuisine. He worked in my restaurant in Dubai and showcased the finest molecular gastronomy.”

Chamoli’s international journey accelerated in Dubai at Chef Kapoor’s Signature Restaurant, where he spent four transformative years mastering modern Indian gastronomy. He earned two PRO Chef Award nominations, the Hospitality Excellence Award in 2015, and the Restaurant of the Year Award in 2017, establishing him as a leading force in contemporary Indian cuisine abroad.

A career highlight came when Chamoli curated state banquets for Prime Minister Narendra Modi during his UAE visits in 2015 and 2018, under the leadership of none other than Chef Sanjeev Kapoor, showcasing India’s rich culinary heritage on a global diplomatic platform. He also executed royal dinners in Abu Dhabi, working alongside international teams to deliver meticulously crafted menus, further solidifying his reputation for orchestrating world-class dining experiences for dignitaries and global guests alike.

In the United States, Chamoli led American Tandoor with Punjab Grill LLC in Washington DC and later shaped Amber Flavors and Saffron Indian Cuisine in North Carolina. Under his direction, Saffron earned a Maggie Award nomination for Best Indian Restaurant in Wake County within its first year, reinforcing his influence on the regional dining scene.

From wellness cuisine in the Himalayas to molecular gastronomy in Dubai and Indo-Middle Eastern flavors in the U.S., Chamoli continues to push culinary boundaries. Today, as corporate chef at Saffron Indian Cuisine under Balaji Hospitality, he oversees operations across the Triangle area of North Carolina, carrying forward his mission of taking Indian flavors from the Ganges to the global stage.
