The culinary journey begins with vibrant appetisers such as the Alphonso & Ruby Beetroot Bruschetta, where the sweetness of Alphonso mango is paired with roasted beetroot, mascarpone, mint, and honey. Another highlight is the Chilled Mango Chili Gazpacho, a refreshing soup that blends Alphonso mango with aji amarillo chili and cucumber, striking a perfect balance for the summer palate. These dishes set the tone for a menu rooted in freshness and creativity.
Moving to the mains, the offerings remain both hearty and refreshing. The Savory Mango & Black Rice Buddha Bowl combines black rice, avocado, sweet potato, kale, and Alphonso mango, while the Honey-Mango Glazed Chicken, served with jasmine rice and fresh mango salsa, delivers a satisfying blend of sweet and savoury flavours.
