Lockdown Recipe: Chef Chandrachur Chamoli Punjab Grill Washington

Bread Bomb prepared by Chef Chandrachur Chamoli Punjab Grill Washington D.C.

Bread Bomb: Servings: 10 pieces

INGREDIENTS:   

White sandwich bread:     10 Pcs.   

Boiled potato:                    2 Big size (Mashed)

Onion:                               200 Gm. (Fine chopped)

Ginger:                             1” piece (Fine chopped)

Green peas:                      50 Gm. (Boiled)

Capsicum Green:            1 (Fine chopped)

Cottage cheese:               50 Gm. (Cut into small cubes)

Green chilly:                     34 Pcs (Fine chopped)

Cilantro leaves:                10 Gm.

Mustard seeds:                1 Tb spoon

Chat masala:                    1 Tb spoon

Salt:                                  As per taste

Turmeric:                         1 Tb spoon

Cumin seed powder:       1 Tb spoon

Lemon juice:                    2 Tb spoon

Frying oil:                         500 Ml.

 

METHOD:

  1. Crack the mustard seeds in 2 Tb spoon oil, then add fine chopped onion and let it turn golden. Add ginger and green chilies.   
  2. Add salt, turmeric than the vegetables and mashed potatoes.  
  3. After mixing, add cottage cheese, cumin seed powder, chat masala and lemon juice.

Then add cilantro leaves.  

  1. Now, cut the edges of bread and spray some water on the bread and press/ spread it with rolling pin.  
  2. Now take 1 scoop of filling and put it at the center of bread and now turn it in to a ball shape with the help of your palms.  
  3. Check the oil, it should be hot enough to fry the balls, if oil is less hot, the bread will absorb a lot of oil. Fry the rolls for 1 minute, it will turn dark brown.
  4. Serve with sweet yogurt, tamarind and green mint chutney.

He accompanied with Padma Shri awardee Chef Sanjeev Kapoor on special invitation to serve VVIP lunch and dinner for Honorable Prime Minister of India Mr. Narendra Modi with Crown Prince his Highness Mohammed bin Zayad bin sultan Al Nahayan and other dignitaries from India and Abu Dhabi. The official royal banquet was held at Emirates palace hotel, Abu Dhabi. 

He has also shown his expertise to lead task force at The Lalit hotel in Srinagar (Jammu & Kashmir) for handling special VIP event for the Chief Minister of J&K state. He was also the part of team on a special invite in Maldives to do function of Hilton Iru Fushi for special delegates.  

Chef Chandrachur has vast experience working in leading hotels in India and abroad. Prior to joining Punjab Grill Washington, he has worked for American tandoor restaurant in USA. Going back to his previous culinary journey, he has worked for Signature By Sanjeev Kapoor Restaurant in Hotel Melia Dubai 5 Star Boutique Hotel, Ananda in the Himalayas, The Lalit Ashok Bangalore India, Hotel Hill View Faridabad and Best Western The Emerald in Mumbai.
