The Best CookBook for everyone by faculty of Food Production team of IHM Mumbai

India’s premier and oldest hotel management institute IHM Mumbai launched ‘Subz ki Tokri’ , a vegetarian e-book for everyone. The book was launched on the auspicious day of International Chef’s Day. The E-book was digitally launched by Ms. Valsa Nair Singh, IAS, Principal Secretary, Tourism, Government of Maharashtra, Chairperson of IHM Mumbai and A K Singh, Principal, IHM Mumbai.

‘Subz ki Tokri’ is a collective effort by the faculty of the Food Production team of IHM Mumbai. They meticulously researched unique and traditional recipes. The team has also taken the liberty of adding their own signature twist to it, which has really come out very well.

A K Singh, Principal, IHM Mumbai, speaking to Mumbai Messenger Newspaper said “ The idea for this book was born last year during which the Chefs not only formulated the recipes but also cooked their recipes. While doing research and development, they got the photos clicked and captured their essence in photographs. Despite uncertain times of COVID 19 lockdown, it didn’t deter their spirits. They were keen and wanted to come up with this book against all odds. Remarkably, they made the year 2020 memorable in a good way. I am sure this would be helpful to everyone to try out recipes from this book”.

Padmashri Awardee, Grand Master Celebrity Chef Sanjeev Kapoor on the launch of Cookbook said “IHM’s all over India are known for creating exclusive and unique things periodically. This cookbook by faculties of IHM Mumbai is a milestone. Despite their hectic schedule, they have made this book really commendable. I am sure this book would be a milestone for other institutes to do similar exercises and come out with different books.

Chef Kapoor further added, “This book not only helps commoners but would also help students to create dishes with new twists. I really feel proud to be a student of IHM Pusa. I congratulate the Principal and faculties of IHM Mumbai for penning down this cookbook. This book would remain lifelong for references in a period to come”.
