Chef Jean Christophe Fieschi newly appointed Director of Culinary at Grand Hyatt Mumbai

Born in Dakar (Senegal), highly experienced Chef Christophe Fieschi has joined Grand Hyatt Mumbai Hotel and Residences as Director of Culinary recently. Chef Fieschi is truly a veteran in the hospitality industry and has worked for leading hotels of the world for over three decades, bringing along with him an ocean of culinary wealth.

Chef Fieschi is a true “globe-cooker”, he worked in various countries around the world such as Senegal, Doha, France and Libya to name a few. He discovered the joy of culinary arts with members of his extended family-butchers, cooks and pastry. Not only has Chef Fieschi been exposed to the cuisines of the world, but has also had the opportunity to work with some of the finest names in the Hospitality space, such as InterContinental, Le Méridien and Hyatt Hotels and Resorts.

Chef Fieschi states, “I love Asia for its cuisine, culture and the fact that I can learn and then adapt certain techniques and processes to French cuisine”.

It is to be noted that Chef Fieschi worked as Executive Chef at Grand Hyatt Mumbai for more than five and half years from 2008 to 2013. It is truly a great occasion to welcome back Chef Fieschi at Grand Hyatt Mumbai Hotel and Residences for his second term and this time to lead the Culinary Arts. An instrumental figure in setting up operating standards of the iconic and signature outlets of the hotel, he is back to impress upon the latest trends in world cuisine and to sprinkle the culinary spectrum with a fresh flavour of life.

A true globe-trotting chef:

Chef Jean-Christophe Fieschi, has kept his childhood between Senegal, France and Libya. At 19, he graduated from the Hotel School. He embarked on the adventure and worked as a Kitchen clerk in several restaurants in Vichy (France). He then participated in the reopening of the sumptuous Château de Mercues (France) as Chef de Partie. This initiative gave him enough confidence to fly to other exploration territories and kept on climbing the ladder of success.

His journey began in Abu Dhabi (UAE) in 1986, as Chef de Partie at the InterContinental then at Le Méridien. In 1989, after a stint at the InterContinental in Manama (Bahrain) as Sous-Chef, he left the Middle East for Asia. Attracted by the dynamics and know-how of the Hyatt group, he became the Executive Sous-Chef of the Hyatt Regency Kowloon (Hong Kong). A detour to Dubai (UAE) between 1993 and 1998, the time to become Executive Chef, and he returned to Asia: Hyatt Regency in Osaka (Japan) then Grand Hyatt Taïpeï (Taiwan) to finally arrive in India in 2008, at the Grand Hyatt in Mumbai – India. Now back to Mumbai to play his second inning for globally acclaimed Grand Hyatt Mumbai.

His vast experience at top hotels of the world includes Grand Hyatt Kuwait, Grand Hyatt Doha, Grand Hyatt Mumbai, Grand Hyatt Taipei, Hyatt Regency Osaka, Hyatt Regency Dubai & Galleria and Hyatt Regency Hong-Kong to name a few.
