In a move that underscores its commitment to culinary innovation, Fairmont Mumbai has announced the appointment of Prasad Metrani as its new Director of Culinary. With a career spanning more than 20 years across luxury hotels and international kitchens, Metrani is set to lead the hotel’s gastronomic vision with creativity, passion, and purpose.
For Metrani, cooking has always been more than a profession—it’s a form of storytelling. “It’s not just about preparing a dish. It’s about crafting an experience that lingers in the guest’s memory,” he says. His return to Fairmont, where he previously served with distinction, marks a full-circle moment in a career rich with global experience.
From the Taj Mahal Palace to the decks of Seabourn Cruise Liners, and from Fairmont Jaipur to Raffles Udaipur, Metrani has consistently elevated culinary experiences with a blend of tradition and modern finesse. His previous leadership roles at marquee hotels like Grand Hyatt and Conrad Bangalore have further sharpened his ability to lead multicultural teams and curate diverse dining concepts.
At Fairmont Mumbai, Metrani’s mission is clear: to create dining that is “anti-ordinary.” Expect theatrical table-side presentations, culturally inspired rituals, and thoughtfully crafted menus that engage every sense. “Fairmont Mumbai has the spirit to surprise,” he says. “I’m here to turn that spirit into unforgettable food moments.”
Known for his detail-oriented approach and flair for innovation, Metrani plans to integrate sustainability and storytelling into every plate. Educational Assets: Chef Metrani graduated in Food Science from DG Ruparel College of Arts, Science, and Commerce. Following this, he pursued a BSc in Hospitality & Hotel Administration from Institute of Hotel Management, Hyderabad, affiliated with IGNOU University.
