Chef Vinita Ghatge Brings Royal Maratha Flavours to Fairmont Mumbai

Fairmont Mumbai is set to celebrate Maharashtra’s rich culinary heritage with The Royal Maratha Edit, the latest edition of its acclaimed The Locale Series, from June 25 to 28, 2026. Hosted at The Merchants, the four-day culinary showcase will feature a specially curated menu by celebrity chef Vinita Ghatge, bringing the authentic flavours of Marathwada and Kolhapur’s royal kitchens to Mumbai diners.

The Locale Series has been designed to spotlight India’s diverse regional cuisines and the custodians of these culinary traditions. Through immersive dining experiences and carefully curated menus, the initiative seeks to introduce guests to lesser-known food cultures and the stories that have shaped them over generations.

Chef Vinita Ghatge, who belongs to a distinguished Saranjam Inamdar family with historical links to erstwhile Maratha royal households, has dedicated years to preserving recipes and culinary practices inherited from her ancestors. Guided by her great-grandmother, Nanibai Saheb Rane, Ghatge has documented treasured family recipes that reflect the grandeur and sophistication of traditional Maratha cuisine.

The menu for The Royal Maratha Edit will showcase heirloom recipes, regional delicacies and distinctive spice blends that have remained part of royal and aristocratic family traditions for generations. Many of these dishes are rarely available outside heritage homes and festive family gatherings, offering guests a rare opportunity to experience authentic Maratha culinary traditions.

Chef Mihir Kane, Director of Culinary at Fairmont Mumbai, commenting on the initiative, said that The Locale Series serves as a platform to celebrate India’s culinary diversity and preserve regional food narratives. He noted that Chef Ghatge’s menu represents not only exceptional recipes but also generations of family history, culture and tradition.

The dinner-only experience will be available at The Merchants, Fairmont Mumbai, at ₹3,299 plus taxes per person, promising guests an authentic journey through Maharashtra’s royal culinary heritage.
