Bruno Fuentes has been appointed Director of Restaurants, Penthouse at The St. Regis Mumbai, bringing more than a decade of international experience in luxury food and beverage operations. In his new role, he will oversee the operations of Penthouse and focus on enhancing its dining concepts, beverage programmes and overall guest experience.
A graduate of California State University, Long Beach, with a Bachelor of Science in Hospitality Management, Fuentes has built his career across Los Angeles, Hong Kong and Bangkok. His expertise spans restaurant operations, commercial strategy, guest experience and luxury hospitality.
Before joining The St. Regis Mumbai, Fuentes led Guilty Bangkok and Aqua Bar at Anantara Siam Bangkok. During his tenure, Guilty earned recognition as one of Bangkok’s leading Peruvian restaurants on TripAdvisor through guest engagement initiatives and curated dining experiences. Earlier, he was associated with Popinjays Rooftop Restaurant & Bar at The Murray, Hong Kong, where he contributed to developing its dining and nightlife offerings.
Commenting on his appointment, Fuentes said Mumbai’s vibrant energy, cultural diversity and evolving culinary landscape make it an exciting destination for hospitality professionals. He added that he looks forward to exploring the city’s food culture, from popular local favourites to contemporary restaurants and bars, while contributing to Penthouse’s hospitality experiences.
Speaking about his approach to hospitality, Fuentes said memorable restaurants are built not only on food and beverages but also on the experiences they create. He added that thoughtful service, attention to detail and genuine guest engagement encourage visitors to return.
