Fairmont Mumbai has expanded its culinary offerings with the introduction of 24-hour dining at Madeleine de Proust, its signature tea lounge and café, catering to the needs of travellers, late-night diners and guests seeking quality cuisine at any hour.
The move is accompanied by the launch of a new Dinner and Midnight Menus, transforming the venue into an all-day and all-night dining destination. The initiative reflects the growing demand for round-the-clock hospitality experiences in Mumbai, a city known for its vibrant nightlife and busy travel schedules.
The newly introduced dinner menu features a blend of international flavours and contemporary cuisine, including dishes such as Cacio e Pepe with charred asparagus and Chilean Seabass with caviar beurre blanc. From midnight until 6 a.m., guests can choose from a specially curated comfort-food menu featuring Kutti Lal Mirch ka Murgh Tikka, Butter Chicken with baby butter naan, Gosht Dum Biryani and Garlic Symphony Spaghetti.
Chef Mihir Kane, Director of Culinary at Fairmont Mumbai, commenting on the concept, said the objective was to create a seamless dining experience that evolves throughout the day while meeting the changing preferences of modern diners.
With its round-the-clock service and carefully curated menus, Madeleine de Proust aims to offer a refined dining experience from breakfast through the early hours of the morning, further strengthening Mumbai’s growing after-hours culinary landscape.
