Khurchan Paneer & Soya ki Chap
Rediscover traditional cooking techniques such as ‘SIGRI’, a flat open stove of cast iron, using charcoal as the cooking medium and kebabs cooked in flat metal skewers over the dying embers. ‘HANDI’ Food cooked in the dhabas in traditional deep mouthed vessels made of clay/ bronze which imparts its signature aroma and the goodness of tradition into the food. ‘LAGAAN’ Heavy duty thick walled copper vessels used specially to retain extra heat for slow cooking of meats and spices and ‘KANAK’ Traditional breads from the clay tandoor ovens.
