The popular Merlin’s Bar at India’s first ecotel hotel, The Orchid, has launched an all-new food and cocktail menu for its guests, reflecting modern culinary preferences and Mumbai’s vibrant cocktail culture. The concept was curated under the guidance of General Manager Ravi Rai, while the innovative cocktail menu was crafted by Assistant Food & Beverage Manager Shivram Verma after extensive research and experimentation. The food offerings, on the other hand, were designed with creativity and finesse by Executive Chef Vishal Chandnani and his team, bringing together a perfect balance of fusion and classic flavors.
The menu boasts a wide variety of dishes to cater to diverse palates, including Mystic Walnut Seekh, Sizzle Brick, Jiziki Mushroom, Chicken Rock Fingers, Bloody Mary Prawns, Hakka Style Chicken, Peppy Paneer Tikka Pizza, Jamaican Chicken Fiesta, Chicken Schezwan Bowl, Veg and Chicken Mexican Bowls. The dessert selection features international favorites like Tiramisu and Biscoff Cheesecake, adding a sweet finishing touch to the experience.
The cocktail menu stands out for its local connect—each drink is inspired by iconic Mumbai neighborhoods, giving it a cultural depth. Signature creations include Tardeo Twilight, Queen’s Necklace, Crawford Spice Market, Bhendi Bazaar, and Marine Drive Sunset, among others.
“This menu brings not just innovation in flavors and presentation but also celebrates Mumbai’s cultural diversity through food and drinks,” said Ravi Rai, General Manager, emphasizing that the offerings blend taste, sustainability, and visual appeal to create an unforgettable experience designed to captivate every guest, elevate dining standards, and reflect Orchid Hotel’s commitment to excellence and creativity in the evolving hospitality landscape.
Chef Vishal Chandnani added, “The Orchid kitchen is not just a space to cook; it’s a platform for creativity, cultural diversity, and flavor. Our goal is to tell a story through every plate, combining traditional Indian flavors with global techniques for a truly unique dining experience.”
This thoughtfully curated menu positions Merlin’s Bar as one of Mumbai’s most creative, progressive, lively and inviting destinations for culinary enthusiasts.
