From the rustic flavours of Rajasthan to the cosmopolitan tables of London and now Worthing, renowned chef  Dayashankar Sharma has carved a remarkable culinary journey. With the launch of his new restaurant Bauji Bistro, the chef presents Indian comfort food in a modern, approachable form—marking the beginning of a fresh dining narrative rooted in tradition.

Chef Sharma’s journey began with the simple, soulful meals of his childhood. Inspired by his mother’s cooking and deeply connected to family traditions, he pursued a career in the culinary arts. After gaining experience in India, he moved to London, where he reimagined Indian cuisine with a contemporary touch, earning recognition for his distinctive style. His first restaurant, Heritage Dulwich, stands as a testament to this vision and has received international acclaim.

With Bauji Bistro, his second venture, chef Sharma brings his philosophy to life in a more relaxed and homely format. The name “Bauji,” meaning father, reflects warmth, nostalgia, and familial bonds—an emotion that resonates through every dish. The menu is centred around Indian comfort food, featuring flavours from Rajasthan and across the country, along with selected favourites from Heritage Dulwich.

The restaurant’s interiors echo the charm of Rajasthan. Inspired by Jaipur’s sandstone architecture, the space features pink-toned tiles, natural materials, and lush greenery, creating a warm and inviting atmosphere that is both casual and comforting.

Chef Sharma, speaking about his vision said, “Every dish at Bauji Bistro is connected to my childhood and family memories. From the soil of Rajasthan to the tables of Worthing, my journey reflects that it is possible to take the taste of home to the world. For me, food is not just about nourishment—it is an experience of culture, memories, and love, and that is exactly what I aim to offer at Bauji Bistro.”
